85% Vigonier, 15% Sauvignon Blanc
Winemaker’s note: “This wine is its own animal… It’s more of red wine with a ‘pigmentation deficiency’ than it is traditional white grape wine.
Aged in a stainless steel tank. Malo-latic fermentation started on its own in December and finished in mid January. Prior to bottling, the Sauvignon Blanc was blended into the Viognier to increase acidity, soften the palate and add dramatic flare to the aromatics.
