From the Northeast of Spain comes a fine sparkling wine in Pet Nat clothing. Like a beautiful champagne, this has all the complexities and subtleties one might expect as well as a savory soulfulness. Bright Citrus and buttery apple turnover on the nose and a broad, expressive palate with apple, noisette and citrus zest. Fine, persistent bubbles chase the body. Finishes clean and fresh, Allow to open up a bit for maximum effect. Created by Alba Vives and partner Josep Dasca on their ancestral holdings, this tiny production wine is made with minimal intervention from Cartoixa, better known as Xarel-lo, the chief grape used to make Cava.
