Bardos Cider's Rocinante is a non-vintage sparkling cider crafted from a blend of heirloom apple varieties grown in Sonoma County, California. It is made from hand-harvested apples, including King, Summer Banana, Baldwin, and Spitzenberg, as well as York Imperial, Rhode Island Greening, Winesap, and Rome Beauty sourced from dry-farmed orchards. The cider is spontaneously fermented, bottled unfined and unfiltered, with no additional SO2.
